Crockpot: Salsa Chicken Tacos

Today is a good day!

I have my Principles of Primary Care exam tomorrow, so I’m going to pretty much spend today glued to my notes. In the meantime, I would like to leave you with this amazing recipe. On Saturday instead of going out to eat, I made tacos! Since we live in a college town, its move-in weekend, which means we basically can’t leave anywhere without hitting traffic and undergrads who are trying to find their way around! Although it sounds frustrating, I actually love it. I think its crazy that this was me only 5 short years ago, so it really does make me happy, as long as I’m not in a hurry to get anywhere ;-).

I can’t wait to tell you all the wonderful things about these Salsa Chicken Tacos. Lets start with the fact that they are cheap. Its great to bring to an event or to have people over to enjoy – because it doesn’t break the bank! And in med school… that means everything. They are also healthy, full of protein, and they save in the fridge really well! Is there anything else you want out of your dinner recipe? because I can’t think of anything I like more than cheap, fast, simple, and delicious!

I made a huge batch of chicken (1 chicken breast makes about 5-6 tacos). After we had our taco night, I saved the rest of the meat in a tupperware for me to eat on my salads all week for lunch. Since I don’t usually want the extra calories or carbs, I like to eat the chicken plain over lettuce instead of as tacos, but chose to enjoy it in anyway you like!

Crockpot: Salsa Chicken Tacos

  • 2 jars salsa (I used Amy’s Organics medium salsa )
  • 4 chicken breasts
  • 1 can green chilies
  • 2 packets of taco seasoning (I used medium)
  • For tacos: Small (8in) flour tortillas, shredded lettuce, monterey jack, pico de gallo

Dump everything into the crockpot except for the green chiles and cook for 5-6 hours on low (3-4 on high). I put mine on low and found it was ready closer to 5 hours, so make sure to check on it!

After the chicken was cooked, I took it out of the juice and shredded it all on a plate. I added the green chiles and about 1 cup (more or less designing on what you like) of the salsa juices from the crock pot back onto the chicken to keep it moist and delicious. Assemble tacos or eat plain! Either way is wonderful :-).
