Hello!! Wow it’s already Thrusday? Where did this week go! I feel like whenever we have a 4-day week it flies by so quickly… I am not complaining.
We had our pathology exam yesterday and it was tough. No time to relax yet either, we have an immunology final on Friday- it never ends! Wish me luck while I inhale by body weight in tea and coffee in the next 24 hours :-).
I made a delicious Ramen Soup the other night. Healthy, NO MSG, and packed with veggies. Fall is approaching here on the east coast, and I figured this recipe coincides nicely with the cooling air of September.
Spicy Garlic Ramen Soup
- Brown rice noodles (handful)
- 3 Tbs sesame oil
- 1 Tbs garlic
- 1 tsp ground ginger
- 4 cups of chicken broth
- 1/4 cup of soy sauce
- 1 Tbs Siracha (less or more, dending on what you like)
- 4 cups spinach
- 2 eggs (or more)
Cook garlic in the seasame oil until fragrant (3-4 min) in a large pot. Add chicken broth, soy sauce, and Siracha. Cook until boiling. Add noodles, cook. At the very end, add in spinach and cook for 2 minutes until wilted. Pour into bowls. Poach 1 egg in boiling water, add to bowl. Top with more Siracha!
