This recipe as quite a kick to it, so if you love spicy and flavorful chicken dishes (doesn’t everyone?!) then keep reading!!
We had our Micro exam yesterday and it wasn’t bad at all! I felt super prepared, which is good considering how much time I spent studying for it! I went to hot yoga yesterday and tried to relax a little before buckling down to study for my exam on Friday. Yoga has been such a nice relief from medical school.
This is a quick recipe I made between studying and it turned out super delicious! I hope you try it!
Sriracha Honey-seared Chicken and Broccoli
- 4 chicken breast cut into slices
- 1 cup broccoli
- 1/3 cup of Sriracha
- 2 Tbs. lime juice
- 1 Tbs coconut oil
- 1 cup cooked quinoa
Sauce the chicken in the coconut oil. Add the broccoli and cook for 4-5 more minutes. In a separate bowl, mix together Sriracha, honey and lime. Once broccoli is tender, pour Sriracha mixture over chicken and broccoli. Serve onto of cooked quinoa.
