Crockpot: Catalina French Onion Chicken


Only 12 days left of my first block of medical school… can you believe that? Its so crazy to me how quickly its gone by. I feel going to school everyday and spending the evenings studying makes the days go by really slow.. when in reality… they fly by. Our “Fundamentals of Medicine” block is coming to an end and to be honest… I’m so happy!! After this we get to dive into the systems of the body! Musculoskeletal, Neuro, Cardio/Pulm. It just gets so much better, so I’m happy to leave first block in the dust 😉

I’ve been going to hot yoga about 2 times a week, and I’ve been running about three times a week. Nowhere near as far as I want to run, but I usually can’t spare more the 40 minutes to exercise. How sad is that?! Yesterday I actually did both! I went for a quick 2 mile run, and then went to yoga with some of my girlfriends from class! It was the perfect ending to a crazy week.

I was having a problem where my yoga mat kept slipping around under my feet. A friend recommended me trying a towel underneath so I bought one! I haven’t tried it yet but I hope it solves the problem.

This week I made a wonderfully easy crock pot chicken that I threw on top of some rainbow quinoa for a quick and easy meal! Hope you enjoy!

Crockpot: Catalina French Onion Chicken

  • 1 bottle Catalina dressing, fat free
  • 1 packet of dried french onion dip
  • 1 jar of Cranberry sauce, whole berry not jelled
  • 1 onion, sliced
  • 4 chicken breasts, whole

Thats it! Throw it all into the crockpot and cook on low for 6 hours (or high for 4). Take the chicken out, shred it and top with all the juices from the crock pot and serve!
