I’m writing this from the middle of “Blizzard 2016” although the snow accumulation has been impressive… It has not been as bad as we anticipated. Just an excuse to stay inside and watch Netflix and pretend that our Neuro block isn’t looming over our heads.
This recipe is super unique but is a great and healthy alternative to a regular Alfredo sauce. 🙂
Sweet Potato “Alfredo” Pasta
- 1 sweet potato
- 1 box of angel hair whole grain pasta
- 1tsp garlic salt
- 1 clove of garlic
- 1/2 tsp dried basil
- 1/4 c chicken broth
- 2 tsp unsweetened almond milk
- 1/8 cup Parmesan cheese (grated)
- 1/2 tsp Mrs dash seasoning
- 2 tsp olive oil
Boil a pot of water for the pasta and cook until done, add olive oil to keep from sticking. To cook the potato, poke holes all over the sweet potato and microwave it for 5 minutes. Scoop out the cooked sweet potato from the skin and put it in the blender. Add the garlic salt, basil, garlic, chicken broth, Parmesan cheese, almond milk, and Mrs dash seasoning. Once pasta is cooked, drain the water, add the sauce to the pasta pot and stir together. Enjoy!
