The last couple days have been a whirlwind. I’ve been trying to get ahead in my pathology class as well as study for my neurology exam so things have been busy!
I got in a very nice run on Monday, it was in the high 50s and beautiful outside!
I have a wonderful recipe for you that is super light and healthy. It makes a lot of food too… Perfect for lunch the next day! I hope you enjoy 🙂
Spicy Turkey and Brocolli Pasta
- 1 lb Lean ground turkey
- 1 box orecchiette pasta
- 1 package of Brocolli florets
- 1 tbs red pepper flakes
- 1 tsp fennel seed
- 2 tsp olive oil
- 3 tbp grated Parmesan
Boil a pot of salted water and cook the pasta. Throw in the Brocolli to the pot for the last 3 minutes of cooking the pasta. Drain the water. Add oil to separate skillet with garlic and fennel. Cook for 30 seconds. Add turkey and cook by breaking it up with a wooden spoon. Once fully cooked, add to pot with pasta and Brocolli. Add Parmesan and red pepper to the pot. Season with salt and pepper. Done!
